Labor Day is all about good food, great company, and soaking up those last summer vibes. With the grill loaded up with burgers, ribs, and other favorites, it’s easy for the menu to lean heavy. Balance things out by adding some fresh, colorful options to the table.
Think creamy hummus or zesty guacamole surrounded by crisp veggies for dipping. Pile on a big platter of fresh fruit – watermelon, berries, and pineapple bring a burst of sweetness and hydration. And yes, there’s room for those indulgent treats, too. The secret? Keep them, but pair them with lighter bites so you can enjoy the best of both worlds.

Sweet Honey Glazed Cucumber Rolls
Prep: 20 minutes
Makes: 2 servings
Ingredients
- 1 large English Cucumber
- 4 ounces light cream cheese, at room temperature
- 2 tablespoons low fat Greek yogurt
- 1 tablespoon minced cilantro
- 4 slices Boar’s Head Sweet B’s Honey Glazed Chicken
- ½ avocado, sliced
- ½ carrot, cut into thin matchsticks
- Siracha, for drizzling
Directions:
- Trim ends of cucumber, cut ¼ of the cucumber off and reserve for another use. Using the larger end of the cucumber, take a vegetable peeler, slice the cucumber lengthwise to get about good strips.
- Lay the cucumber strips vertically on a cutting board, overlapping each strip.
- In a small bowl combine the cream cheese, yogurt and cilantro.
- Spread the mixture over the whole cucumber sheet, layer with Boar’s Head Chicken, avocado and carrot. Using a large knife, carefully slide knife under the cucumber and start rolling away from you, keeping it very tight. once rolled tightly, slice into 10 pieces and enjoy.
