The Good Batch Confetti Cake Ice Cream Sandwich

Ice cream cookie sandwich confetti cake is inspired by the nostalgic flavor of vanilla layer cake brightened with fluffy lemon buttercream and a showering of rainbow sprinkles. Cookies make our world go round. We started baking cookies for local markets in 2010, and quickly discovered how spectacular they are layered with ice cream and toppings. Fortunately many others thought so too, and we haven't stopped handcrafting these ice cream cookie sandwiches since. Enjoy all to yourself or shore with your favorite people.
