We all know a super mom…she’s busy getting kids ready for school, she may even be home schooling, preparing breakfast, lunches & dinner, driving to and from school events and the list goes on!

Baked Chicken And Waffles

Baked Chicken & Waffles

You won’t believe this indulgent brunch comes packed with a good source of protein and fiber! The bacon adds a nice saltiness to this dish, feel free to substitute turkey bacon or Canadian ham.

Prep: 10 minutes

(inactive time 4 hours or overnight)

Bake: 10 to 15 minutes

Makes: 2 Servings

Ingredients

  • 8 ounces Skinless, Boneless Chicken Breast
  • 1 cup low-fat buttermilk
  • 1 tbsp hot sauce
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ cup Plain Panko Breadcrumbs
  • 2 Belgian style waffles, frozen or homemade
  • 4 slices Oscar Mayer Bacon
  • Pure maple syrup (optional)

Directions:

  1. Cut chicken breast into ½ inch thick cutlets and then in half.
  2. In a glass bowl or food safe zip-locked bag place chicken inside. In a small bowl, combine buttermilk and hot sauce, pour over chicken and marinate for approximately 4 hours or overnight.
  3. When ready to cook, preheat your oven to 450 degrees F. Cover a baking sheet with aluminum foil and coat with non-stick cooking spray.
  4. In a wide shallow bowl add panko breadcrumbs, paprika, salt and black pepper.
  5. Remove chicken from buttermilk and place directly into panko mixture, evenly coat each chicken breast.
  6. Place chicken on prepared baking sheet and coat each piece of chicken with cooking spray. Place in oven and cook for 5 minutes each side or until chicken is crisp and cooked through.
  7. While chicken is cooking, prepare bacon. Place 4 slices bacon onto skillet, and cook on low until crisp. Drain bacon on paper towels.
  8. Meanwhile, prepare your thick waffles according to package directions if using frozen waffles.
  9. Assembly: Place one waffle on a dish followed by bacon, chicken and a drizzle of pure maple syrup.

Serving suggestion: Serve alongside a big bowl of strawberries!
