High Protein Eggplant Broccoli Casserole
Eggplant, Broccoli & Cottage Cheese Casserole

Ingredients:
• 1 medium eggplant, cut into ¾ inch cubes
• 6 cups broccoli florets, chopped
• 1 red bell pepper, diced
• 1 cup shredded part-skim mozzarella cheese
• ½ cup sliced kalamata olives
• 2 cups cottage cheese, smooth if desired
• 2 tablespoons olive oil
• 2 teaspoons dried oregano
• 1 teaspoon kosher salt
• ½ teaspoon ground black pepper
Directions:
1. Prepare: Preheat oven to 400 F.
2. Bake vegetables: Spread out eggplant cubes, broccoli florets and bell pepper in single layer on baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake uncovered at 400 F until eggplant and broccoli are tender, about 20 minutes.
3. Assemble Casserole: Add roasted eggplant and broccoli to 8x8 inch baking dish. Season with oregano and mix in cottage cheese. Add in sliced olives, and 2/3 of the cheese to baking dish. Carefully stir until well-mixed. Evenly scatter remaining cheese on top.
4. Bake Casserole: Bake uncovered at 400 F for 15 minutes and enjoy.
Eat well tip: Stir left over casserole into 2 beaten eggs for a breakfast omelet the next day.Show More
