Holiday Appetizers! Roasted Olive & Ricotta Stuffed Mushrooms
Roasted olive & A delicious and light appetizer for the holidays

Ingredients:
• 24 ounces white stuffing mushrooms, ...cleaned and stems removed and reserved.
• 1 cup pitted kalamata olives, chopped
• 4 garlic cloves smashed
• 3 sprigs thyme
• 1 sprig rosemary
• 1/4 cup olive oil
• 1 teaspoon red pepper flakes
• 1 cup ricotta cheese
• 1/2 cup chopped roasted red peppers diced small
• 1/4 cup fresh flat-leaf parsley chopped
Directions:
1. Preheat oven to 425 degrees F.
2. Add mushroom stems, olives, garlic, herbs and olive oil to a baking dish. Bake for 15-20 minutes.
3. Place mushrooms on baking sheet lined with parchment paper.
4. Remove olives from oven, allow to cool then chop finely.
5. In a bowl combine the roasted olives with the roasted red peppers and ricotta cheese.
6. Spoon the mixture into the mushrooms and bake for an additional 10 minutes. Top with chopped parsley and serve.Show More
