Eggplant Caviar w/ Cottage Cheese Crackers
• 2 eggplants (about 1 lb each)
• 1/4 cup Filippo Berio Extra Virgin Olive Oil
• 1/4 cup minced green onions
• 2 clove garlic
• 2 tsp ...lemon juice
• 1/2 tsp dried basil
• 1/4 tsp freshly ground pepper
Cottage Cheese Chips
• ¾ cup Cottage Cheese, 4% Fat is best, pour off any liquid
• 1 Tbsp Everything bagel seasoning
Directions:
1. Preheat oven to 400°F. Cut eggplants in half lengthwise; place, cut sides down, on baking sheet; bake for 20 minutes or until they are fork-tender.
2. Let eggplants cool slightly; scoop out pulp into blender. Purée pulp; spoon into bowl. Stir in oil, green onions, garlic, lemon juice, basil and pepper. Serve at room temperature or refrigerate for 1 hour before serving.
3. For the Cottage cheese chips: Line a baking sheet with parchment paper, drop tabelspoonfuls of cottage cheese onto parchment, smooth with the back of a spoon. Sprinkle with everything bagel seasoning.
4. Bake for 45 minutes or until crisp. Allow to cool completely before removing.
