Ingredients:

  • 1 ½ Tablespoons Vegetable Bouillon Paste
  • 1 ½ Tablespoons White Miso
  • 1 ½ Tablespoons Chili-Garlic Sauce
  • 1 ½ Tablespoon Grated Ginger
  • ¾ Cup Shredded Carrot, divided
  • ¾ Cup Sliced Shiitake Mushrooms, divided
  • 1 ½ Cups Chopped Baby Spinach, divided
  • 3 Hard Boiled Eggs, halved
  • 1 ½ Cups Cooked Ramen Noodles, divided
  • 3 Tablespoons Sliced Scallions, divided
  • ¾ Teaspoons Sesame Seeds, divided
  • 3 Cups Hot Water, divided

Directions:

  1. Combine bouillon paste, white miso, chili-garlic sauce, and ginger in a small bowl and divide evenly between 3 pint-and-a-half size canning jars.
  2. Layer divided ¼ cups of carrots and mushrooms and ½ cup spinach in each jar. Then, layer 2 egg halves in each jar, followed by ½ cup of ramen noodles. Top the ramen noodles with 1 tablespoon of scallions and ¼ teaspoon sesame seeds per jar. Close jars and refrigerate up to 3 days.
  3. To make one jar of noodles, add 1 cup of very hot water and close jar tightly to shake. Microwave uncovered on high in 1-minute increments for 2-3 minutes until steaming hot. Let stand for 5 minutes and stir before eating.
  4. Enjoy!

  • 12 Hard Boiled Eggs, peeled and chopped
  • 2 Cups Grated Cheddar Cheese
  • 1 Cup Mayonnaise

Who knew hard boiled eggs could be so elegant? This quick gratin recipe calls for a whopping eight eggs, meaning you’ll use up your leftovers in no time at all. Serve with a slice of crusty bread and you’ve got a meal that the family will love.

Ingredients:

  • 1 Tablespoon Butter
  • 8 Hard Boiled Eggs, peeled
  • Freshly Ground Black Pepper, to taste
  • 1 Cup White Cheddar Cheese
  • 1/3 Cup Evaporated Whole Milk
  • 1 Tablespoon Chopped Fresh Parsley

Directions:

  1. Place an oven rack in the top slot of your oven (for broiling) and preheat to 400°F. Place the butter in a large casserole dish and place in oven to melt. Once butter is melted, swirl around the bottom of the dish to coat the entire surface.
  2. Cut each egg into about 6-8 slices. Starting in the center of the dish, layer egg slices along the bottom while overlapping, arranging outwards towards the edges of the dish. Sprinkle with pepper, followed by shredded cheese. Drizzle milk over top.
  3. Place dish on the middle rack of the oven and bake for 5 minutes.
  4. After five minutes, move the dish to top rack (beneath broiler) and broil for 2-3 minutes, or until lightly browned and bubbly.
  5. Sprinkle with parsley and enjoy!
