Servings: 4-6

Coat beef cubes with flour, salt, pepper and paprika. Heat olive oil in large pot and add beef cubes. Sauté until beef is brown on all sides.

 

Add 1 small, finely chopped onion and cook until translucent. Add 3 cups of beef stock and 1 can of tomato paste and stir. Cover and simmer for 1 hour or until meat is tender.

 

Add 1 tablespoon of parsley flakes, 5 potatoes, cut into cubes, 2 cups of sliced carrots, 1 cup of peas and 1 cup of corn and simmer for 1/2 to 1 hour or until vegetables are tender not mushy.




2 lbs. Stewing Beef, cut into 1 inch cubes

 

2-3 Tablespoons Olive Oil

 

1 Small Onion, chopped fine

 

2 Cups Sliced Carrots

 

5 Large Potatoes, cut into 1 inch cubes

 

1 Tablespoon Parsley Flakes

 

1 Tablespoon Paprika

 

Salt & Pepper to taste

 

2-3 Tablespoons Flour (to coat beef cubes)

 

3 Cups Ready Made Beef Stock

 

1 - 6 oz. Can Tomato Paste

 

1 Cup Frozen Peas

 

1 Cup Frozen Corn
